Italian Tomato Soup

Life around our homestead is far from ordinary or dull.  Yesterday we had a wonderful visit at my sister and brother-in-law’s home only to come home and discover that our refrigerator had been ajar the entire day.  Ugh!  Needless to say everything was warm and ruined.  That’s the bad news.  The good news?  It was a great opportunity to purge the refrigerator and clean it good.

So, as well as needing to go to the grocery store and re-stock on the basics (which is really all we need anyway), we had to repair the ever-growing muddy pit we call a driveway.  With all the rain we’ve got, a lovely spring opened up in the middle of the driveway.  There’s no way to go around this huge muddy mess as it spans the entire section of this one part of the half-mile long caleche driveway.  My sweet hubby and father-in-law spent the morning filling it with rocks, pebbles, and plywood boards so that we can at least go over one side of it and not get stuck.

Needless to say, I didn’t feel like cooking a grandiose meal after fixing the driveway, running to the store, etc.  Here’s what I came up with and it fit the bill perfectly.

Italian Tomato Soup

  • 1 pint zucchini, pureed
  • 1 15 ounce can tomato sauce
  • 1 cup homemade chicken stock
  • 1 teaspoon each – dried oregano, dried basil
  • Dash of salt
  • ¼ teaspoon black pepper
  • Parmesan cheese (optional)

Pour the pureed zucchini, tomato sauce, chicken stock and all the spices into a medium-size pot.  Bring to a boil and let simmer for 20-30 minutes.

Ladle into serving bowls, sprinkle on parmesan cheese and serve with a green salad and homemade rolls.

The kids are eating it up like crazy and I haven’t had one complaint!  Now that’s the end to a not-so-relaxing Sunday!

    I have some zucchini and carrots grated up in the freezer and have almost a pint. thanks for the tip. oh hey, came across this site as well. Thought you might enjoy it too. Try the proverbs 31 challenge. It is great! Enjoy!
