Blustery Morning & Hot Baked Oatmeal

Central Texas is experiencing a cold front unlike it since 1996.  At that time we were living in a mobile home with no central heat or air, no woodstove or fireplace and it was snowing and sleeting like crazy.  We were bundled up like eskimos in our home.  Needless to say, it was not the best of living conditions, but we were saving like crazy for our own land.  Those little sacrifices enabled us to buy 6 acres in the country.  But I digress …

Speed forward to January 2010.  We’re still out in the country and there’s no sleet or snow, but the wind is howling like crazy outside.  I don’t think we’re expected to get above freezing until Saturday or Sunday.   I’m really loving this weather.  We hardly ever see it this cold.  It’s a nice change from the 100 degree heat we had all summer.

Last night I prepared Baked Oatmeal so that we would have a good, hearty meal for this morning.  It’s super simple to make and can be made the night before.  In the morning, you simply need to put the dish in the oven and bake as usual.

Baked Oatmeal

  • 2 cups quick oats
  • ½ cup brown sugar
  • ½ teaspoon salt
  • 1 ½ teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ cup raisins (optional)
  • 1 large beaten egg
  • ⅓ cup applesauce
  • ¾ cup milk

Preheat oven to 350° F.  Mix together applesauce, milk and egg.  Add oats, baking powder, salt, cinnamon and raisins.  Mix well.

Pour into greased 8″x8″ pan.

Bake for 25-30 minutes or until done.

Serve with honey, maple syrup, blueberries, or any other way that sounds good.
