Starting the Year off Right & Fried Cabbage
I’ve heard it said that the what you do on the first day of the new year is what you’re going to be doing all year-long. If that’s true, then my house will be clean and shiny all year-long!
Our small home is very cluttered. I cannot stand the mass confusion of toys, clothes, jars, and other hodge podge that we have collected over the years. It drives me crazy … crazy enough to just throw it all out. Okay, so I didn’t throw it all out, but I did get close.
Yesterday the kids and I tackled the upstairs. We pulled the beds away from the walls, cleaned out from underneath, vacuumed, dusted, went through toys and got rid of some, organized the rest, cleaned up the canned goods that I’ve done over the year, etc. We can now walk upstairs without tripping over anything and hopefully now we’ll be able to find everything we’re looking for. We also found TONS of socks under the beds (the kids could never figure out where all their socks went). Well, now we know the bed ate them.
We spent last night down at my in-laws home talking and enjoying a wonderful meal of hamburgers, mashed potatoes, black-eyed peas and fried cabbage. If you don’t like cabbage, you’ll love it this way. It’s awesome!!
Fried Cabbage

1 medium cabbage

1 tablespoon butter

2 teaspoons salt

4 eggs

4 tablespoons milk

2¼ cups flour

½ teaspoon pepper

¼ teaspoon red pepper
Cut cabbage into 6-8 squares or wedges. Cover with water and add 1 tablespoon salt and 1 tablespoon butter. Bring to boil for 5-7 minutes. Drain cabbage. Beat eggs and 4 tablespoons milk. In another container mix flour, pepper and remaining salt. Dip cabbage into egg mixture and coat with flour. Deep fry in hot bacon drippings.
